I made the switch recently from nonstick pans to both a 12" cast iron skillet and an 11" stainless steel pan and I don't regret it in the least. Both require a lot of specific care but also isn't as daunting as a lot of people make it seem. The biggest issue is being mindful and not being lazy when working with either type of cookware. Treat them well and these things do, in fact, work for you for a long time.

While probably worthy of a Something Interesting, I don't really have the time to do some deeper-diving but I have found some good videos and articles if you have either (or both!) of these kinds of cookware on how to effectively use and clean them.
